First day of fall is this Sunday! Are y’all excited?? This past Tex-Mex Tuesday, I tried this new crockpot recipe. The best thing about crockpot recipes is how great it makes your house smell-and you could smell this before you even walked into the house! This was seriously so good and so easy you need to make this ASAP (Sam said these were a top 5 recipe!!) Ok, enough about how yummy these are. First, chop your veggies.Then, make your spice rub and cover your meat generously.Then, place your meat in the bottom of the crockpot, cover with your veggies, and cook on low for 8 hours.

Recipe for Beef Carnitas Tacos

What you need:
- 2 lbs of round or flank steak
- 1/2 yellow onion, chopped
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 1 jalapeño, seeded and chopped
for spice rub:
- 2 teaspoons chili powder
- 1 teaspoon dried minced garlic
- 1/2 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon pepper
for serving:
- flour or corn tortillas
- avocado slices
- cilantro
- salsa
- limes
What to do:
- Mix together all spices in small bowl. Rub spices over meat generously. Then place steak in bottom of crockpot.
- Cover steak with chopped onion, bell peppers and jalapeño pepper. Turn heat on LOW and cook for 8 hours. After 8 hours, shred meat with fork while in crockpot (it should shred easily). You can serve as is, or leave it in the crockpot for another hour. Serve on warm tortillas and top with yummy goodies.
